1️⃣ Use your starter straight from the fridge (cold and hungry) to mix your dough.
2️⃣ Once you’ve used the last bit of it, it’s time to feed.
3️⃣ Feed it equal parts flour and water (for us, that’s 4 cups of each).
4️⃣ Let it sit at room temperature for 8-10 hours to get nice and bubbly.
5️⃣ Put it back in the fridge and forget about it until you need it again.
No discarding. No feeding schedules. No nonsense.
